Setting up and Opening a restaurant
Although Camden will the 40th site I have opened, I have a tendency to always review previous notes and websites that I have captured over the years, to ensure we don’t miss anything. With lots of things happening every day it can be so easy to miss the simplest of things which in time can make a huge difference to a successful open. Flicking through my journals last night I came across the below article from late 2014.
It’s been a very busy week, the build is just 15 days from finishing and is really taking shape the design vision is now coming to life and with influences of copper and blackened ash being used it will ensure the tranquil feel of Asia is brought to Camden. Little touches such as the logo engraved in to the ash (see the picture) will make all the difference.
Controls on costs remain strong, and looks like we have a little left for some fantastic finishing touches with fairy lighting for the trees on the ground floor terrace, branded blankets for the roof terrace and a few others.
Food wise the team have had great feedback from a tasting with customers on Wednesday with the bento boxes and other new dishes such as sushi bagel; sushi savoury donut and poke all coming to Camden only for the first month.
People wise, last few positions are being finalised in the next 7 days and the team is in full training across Covent Garden and Soho sites so looking good here too, but still with lots of training to go!
Busy afternoon planned on signing off the opening promotions and then a night in the restaurant working shoulder to shoulder with the team.
