Tamarind King Prawns with Coconut Rice

Our fantastic family of chefs want to share recipes with you of what they're whipping up at home for their loved ones. Arnel is a sushi chef at inamo Soho, and has been with our company for nearly 10 years. He's prepared Tamarind King Prawns with Coconut Rice for you to have a go at treating your family to as well.

Ingredients
5 tiger king prawns shelled and deveined
1 large onion. Finely chopped
3 cloves garlic. Finely chopped
2cm ginger. Finely chopped
2 peeled plum tomatoes. Finely chopped
½ tsp tamarind paste
small bunch of coriander. Finely chopped
juice of ½ lime
1 tbsp fish sauce
400 ml coconut milk
300 g rice

Method for prawns
deep fry tiger king prawns for 15 secs. Set aside
Sautee onion, garlic and ginger for 1 minute
add 100 ml coconut milk, lime juice and tamarind paste
add plum tomatoes, coriander, and fish sauce
cook for about 10 mins or until the sauce thickens
finally add the prawns and simmer for 2 mins
add salt and pepper to taste

Method for coconut rice
heat 3 tsp of olive oil
gently fry onions until soft but not brown
add 300 g rice and mix
add 300 ml coconut milk and water and cook rice as normal
fold in some chopped coriander before serving
